Wine maker notes
Our vines contain 100% Hondarribi Zuri grape varietal and they have been planted using a trellis framework. The vine grows from a benevolent slate-rich soil and in a warm humid climate. The vineyard is directly impacted by sea winds and also the nearby forrests of oak, chestnuts and beech trees. Grape yield is kept low with just a yield of between 2, 5 and 3, 5 Kgs. per vine, in order to achieve the highest possible quality. All these features help bestow a unique personality to K5 that distinguishes it from all other wines. The scrupulous year round care and cultivation of our vineyards are tended to by our expert staff: Abel, Ruben, Mikel, and Felix. The harvest begins with the arrival of autumn and the winery only uses grape from its own vineyards. Vinification: The grape is unloaded through gravity. First there is a pelicular maceration made at 10º C over the first 12 hours, thus helping to attain greater complexity and a more intense aroma. Alcoholic fermentation: In stainless steel tanks at a controlled temperature of 16º C. Storage: From 4 to 6 months in stainless steel tanks at 9º C.

Food pairing
Txakolina, is a young, refreshing, fruity white wine, made from the indigenous Hondarribi grape variety. This grape grows in The Basque Country, mostly on the hilly slopes overlooking The Cantabrian Sea. Alcoholic content is between 10,5 and 11,5º Vol. Best served at a temperature of 8º C. Serve from bottle into a wine glass from a maximum height of 10cm. Once poured into the glass, this wine releases some small carbon bubbles and emits a wide range of aromas. Suitable Food Pairing: Salads, Sushi, Seafood, Fish and White Meats.

The winery is located within the municipality of Aia, some 9km. from Zarautz, within a marvelous enclave, on the sloping side of The Eztenagako Txorrua Mountain. It is some 300mts. above sea level and affords a panoramic view across the sea: to the left, lies the Raton headland of Getaria and to the right, the estuary of the fishing port of Orio, while the winery itself is surrounded by 15 acres of vineyards which surround the building. The building was designed by the architects, Alonso & Balaguer and it is a minimalistic structure, elegant and functional which blends perfectly with the natural landscape while at the same time it respects the natural environment surrounding it. The design of K 5 Arginano and its development is the work of Mikel Urmeneta and Kukuxumusu.
