This outstanding wine is dedicated to Aime Cazes – the pioneer of great vins doux naturels. The passing time has brought his creation to its ultimate conclusion : a wine enriched by myriad aromas : green nuts, Seville oranges, figs, dried apricots, cinnamon, nutmeg, cardamom ….fragrances whose incredible length is emphasised by the fleshy, suave character of the wine. To appreciate it fully, it should be drunk at a temperature of around 15°C, out of a large, airy glass, and preferably accompanying a dish of foie gras, a dessert with oriental flavours, or a classy cigar.
Wine Advocate 93 points - Representing the culmination of their regular portfolio of wines in this genre (as opposed to the significantly older releases collectively referred to by the winery as “Collection Cazes”), the 1978 Rivesaltes Cuvee Aime Cazes is 80% Grenache Blanc or Gris and only 20% Grenache Noir, but for that reason still technically a “Rivesaltes Tuile” (which I’ve treated as “red wine” for purposes of our database). Creme caramel, candied chestnut and candied orange rind on the nose transfer to a palate that is at once creamy and uncannily vivacious and juicy, which when combined with a finishing lick of salt makes for compulsive salivation as well as genuine refreshment. Maritime notes of kelp and iodine add intrigue – and, dare I suggest, “sense of place”? – to this vibrant and superbly-sustained bottling that will keep indefinitely and definitely prove highly versatile at table. (Jan 2014)

Wine maker notes
VINIFICATION The grapes are pressed immediately after being picked. After racking, the alcoholic fermentation takes place at 18°C and is stopped, while still in its liquid phase, by adding neutral alcohol. The alcohol level is 15% alc/vol, residual sugar level 110g/litre. MATURING The wine matures in old oak tuns for 22 years to ensure just the right level of oxidisation. It evaporates at a rate of 7% each year – more than two-thirds of the total over the period. Once bottled, it is kept in air conditioned cellars.

80% White Grenache, 20 % Black Grenache.
