This outstanding wine is dedicated to Aime Cazes – the pioneer of great vins doux naturels. The passing time has brought his creation to its ultimate conclusion : a wine enriched by myriad aromas : green nuts, Seville oranges, figs, dried apricots, cinnamon, nutmeg, cardamom ….fragrances whose incredible length is emphasised by the fleshy, suave character of the wine. To appreciate it fully, it should be drunk at a temperature of around 15°C, out of a large, airy glass, and preferably accompanying a dish of foie gras, a dessert with oriental flavours, or a classy cigar.
Wine Spectator 92 points - A beautifully mature dessert wine from the south of France, with lively, vibrant flavors of baked peach, ripe apple, orange peel and spice. Finishes with notes of ginger and cream. Drink now. 300 cases made.-KM  (Aug 31 2008)

Wine Advocate 94 points - The 1978 VDN Rivesaltes Aime Cazes is comprised of 80% Grenache Blanc and Grenache Gris, and 20% black Grenache, that spent 22 years in cask. Sporting a fabulous light gold color, it burst from the glass with notions of dried plums, fig, toffee and creme brulee. Full-bodied, seamless and incredibly layered and silky, with vibrant acidity keeping it light and downright gulpable, it’s a brilliant Rivesaltes that will probably age forever. (Apr 2014)

Wine maker notes
VINIFICATION The grapes are pressed immediately after being picked. After racking, the alcoholic fermentation takes place at 18°C and is stopped, while still in its liquid phase, by adding neutral alcohol. The alcohol level is 15% alc/vol, residual sugar level 110g/litre. MATURING The wine matures in old oak tuns for 22 years to ensure just the right level of oxidisation. It evaporates at a rate of 7% each year – more than two-thirds of the total over the period. Once bottled, it is kept in air conditioned cellars.

Technical notes
80% White Grenache, 20 % Black Grenache.
