Pairing wines with Chinese cuisine can often present a challenge. Ingredients such as garlic, ginger, chili pepper, curry, lemongrass, turmeric and the many other pungent spices prevalent in Chinese cooking add such intense flavors and aromas to a dish that they either mask the flavors of the wine, or create an imbalanced taste when combined with the food. Because we at the winery enjoy Asian cuisine and admire the artistry and creativity that goes into preparing Dim Sum dishes, we sought to craft wines that could not just withstand intense tastes, but even enhance the flavors of classic Chinese cuisine when paired together. After finding just the right vineyards and conducting different blending trials we created two wines that work beautifully.
