From vineyards in Sancerre, situated 120 miles south of Paris. The soil is a mixture of chalk, gravel, flint and marl.

|Rigorous yield control (65 hl/ha) is practiced to obtain complexity and minerality. Fully-ripened grapes are pressed and the must is promptly racked and placed into stainless steel fermentation tanks for a long fermentation of 18°C in order to extract intense and delicate aromas. The wine is racked and then matured in tank over the fine lees for a minimum of 6 months before clarification and stabilization of the first bottling.
