Spirit Journal Rating**** (Four Stars)
Medium amber color; excellent clarity. Opening whiffs pick up straightforward scents of unbuttered corn-on-the-cob, sealing wax, and baking parchment; another six minutes of aeration brings out citric acid and yellow fruit aspects that match up well to the corn and waxiness. Entry is firm, focused, and mildly warming; mid-palate is off-dry to gently sweet, pleasingly oaky, a touch fiery (more warm embers than 3 alarm), peppery/spicy, and juicy. Finished in a fruitcake style, that's equal parts dried fruit, cake, and winter spices (cinnamon, vanilla, nutmeg). Its complexity grew, as did my appreciation, over the span of the evaluation. At first, I thought a solid Three Stars, but then luscious aftertaste pushed it into the Four Star zone.
